The Ojai Cook Mask for Poultry
Ingredients
- ㆍ8 ounces turkey or chicken breast, thighs, legs or Cornish game hen
- ㆍ2 ounces Garlic & Herb Lemonaise® or Latin Lemonaise®
- ㆍ1 tablespoon fresh chopped parsley, cilantro, rosemary, or tarragon
Directions
- ㆍCoat poultry with 1 ounce Lemonaise®.
- ㆍPreheat broiler to high. Broil or grill 5-6 minutes. Apply remainingLemonaise®, turn, and broil 5-6 minutes more. Let rest 5 minutes.
- ㆍGarnish with fresh herbs.
- ㆍGreat for whole chicken and turkey too.
The Ojai Cook Mask for Fish
Ingredients
- ㆍ8 ounces salmon, whitefish, sea bass, trout, etc.
- ㆍ2 ounces Garlic & Herb Lemonaise® or Bite Back Tartar Sauce®
Directions
- ㆍGenerously coat top and sides of fish.
- ㆍPreheat broiler to high. Broil or grill 6 minutes per inch (no need to turn).
- ㆍBaste with pan juices. When cooking is complete, let rest 3 minutes.
- ㆍGarnish with chopped cilantro or parsley. Fish will be crispy and moist.
